My Favorite St. Patrick’s Day Meal

This corn beef meal ranks up at the top of my list…my whole family LOVES it!  We only have it at this time of year (February-March).  Costco (and other stores) sell a big corn beef brisket and it is packaged with a little seasoning packet.

All I do is cook it on low all day in the crock pot.  You can either do a bottle of beer or some water with it.  Cook it at least 6 hours, you will know when it’s done if it falls apart easily with a fork.  Last year, we served it with all green food for St. Patrick’s Day.

Have fun with it – my mouth is watering thinking about it.  And this meat is AWESOME chopped up for the Reuben Casserole.

Green Week


Let’s all try to integrate more green, healthy foods into our diet…the holiday coming up is a great excuse to try new things this week – green things! Tell your kids about St. Patrick’s Day and see if they can eat lots of green this week to celebrate! Here are a few ideas…

 
  • Cucumber slices…dipped in plain yogurt with a drop of green food coloring and chives
  • Kiwi slices…or added to a smoothie
  • Asparagus…steamed and drizzled with olive oil, lemon juice and a touch of salt
  • Zucchini…broiled for a bit with a touch of olive oil
  • Avocado…added to a smoothie or sliced up to eat or grilled in a grilled cheese!
  • Bean sprouts…added to a sandwich
  • Brocoli…steamed with a bit of olive oil, lemon juice and feta cheese
  • Green grapes…try them frozen!
  • Green peas…cooked and then add some chopped fresh mint and chives for extra flavor
  • Add fresh basil to anything!
  • Green pepper slices
  • Also, it looks kind of gross but the kids might love it…add a touch of green food coloring to cottage cheese or yogurt or even mac n’ cheese! But my friend Heidi and I found out last year…don’t go too far with this stuff…you’ll end up with some colorful diapers too :/

May Day (flower menu)

Celebrate May Day and create a flower-themed dinner for the whole family! Get creative and see what your kids think of to serve or decorate with. We planned ours at the very last minute, but came up with a couple of fun ideas. While decorating, my kids were saying, “April showers bring May flowers!”

Menu Ideas
  • Cheese Quesadillas, cut into triangles to look like flower pedals (requested by the kids, and I snuck some chopped spinach inside)
  • Black bean Quesadillas (my husband and I enjoyed these)
  • Green Peppers for the flower stem
  • Pumpkin cupcakes decorated with flower frosting for dessert
Decoration Ideas
  • Construction paper flowers
  • Hang May Day baskets from the ceiling
  • Use a flowery table cloth and flower paper napkins
  • Get the kids involved and see what other ideas they can think of!

St. Patrick’s Day Green Menu


This year, we got together with fellow-Irish friends and had a themed lunch. The kids had a blast eating all green food. Next year, my friend and I might avoid using so much green food coloring since we changed a few too many “shamrock diapers” 🙂

Menu Ideas
  • Green kiwi
  • Green Granny Smith apples
  • White cheddar mac n’ cheese, colored green
  • Vanilla pudding, colored green
  • White cake mix, colored green with white cream cheese frosting, colored green
  • Milk, colored green
All of the kids wore green, of course. And we had a hunt to find a little “pot of gold” for each child. We did crafts with green construction paper, some painting and drawing shamrocks. My friend even had Irish music playing in the background! It was a festive and fun day.
